Fast and healthy!

Crockpot Beef Stew

With this pregnancy, I have been so exhausted. Not only from my growing a little life, but because I have low iron. So while I DO have energy, I like to toss a meal in the crockpot so I don't have to cook dinner. Crockpot meals are so fast, easy and cost effective. I don't know about your kids, but my kids are meat lovers. Anything with steak, beef, chicken, pork they will inhale, basically without even chewing! So this is a huge hit with our kids. The great thing about stew is that if you kids won't EAT the actual veggies, you can puree it and hide it in the broth.. They don't even know it's there! It might sound sneaky, but it's not a bad kind of sneaky, right? ;)


Ingredients:
(1) Package of McCormick Slow Cookers Beef Stew powder mixed with 1 1/3 cups of water
1.5 pounds Stew beef (or more depending on how beefy you like it!)
1/2 bag baby carrots
6 potatos peeled and cubed
1 yellow onion diced
2 stalks of celery (including the leaf)
3 cloves of garlic diced

Toss all of the ingredients in the crockpot and cook on low for 8 hours or on high for 4 hours.

Enjoy!! :) I know I will! We are having this for dinner tonight, hopefully with some homemade whole wheat rolls! Which I will be posting a recipe for later on.. so keep an eye out!

  1. Okay, now I want beef stew for dinner......first the muffins, then the stew and THEN you had to mention homemade rolls. Stop it, girl - I'm trying to lose weight... LOL
